Preservation and Processing of Fruits and Vegetables


The temperature of vegetables refrigerated storage is generally between 0 degree and 3 degree, and its humidity is generally controled between 85% and 95%. 

The controlled atmosphere storage of fruits and vegetables (CA storage) is a comprehensive preservation method by refrigerating, reducing the oxygen content and increasing the content of carbon dioxide in the environment.  The applicability of this kind of storage depends on the types, varieties and economic value of goods.  Doing quick-frozen after processing fruits and vegetables is the best way to keep long-term storage and original color, flavor and vitamins.
